chowder

Ingredients

10lbs clams, fish, or other seafood

1-1/2lbs salted pork, finely chopped

2qts onions, chopped

2-3/4 gallon potatoes, diced

1-1/2 gallon hot water

2 gallons hot milk

Salt, to taste

1 cup parsley, chopped

Directions

  1. Cut seafood into 1 inch pieces.
  2. Fry salt pork until crisp. Add onions and cook until tender.
  3. Add potatoes and water. Cover and cook for 15 minutes.
  4. Add seafood and continue cooking 5 to 10 minutes or until seafood and potatoes are tender. 5. Stir in milk, add salt to taste.
  5. Heat, add parsley.
