Who doesn’t love breakfast for supper? This easy meal is always a hit and makes great leftovers in the morning. The ingredients below are for 90 people and cost around $350. It takes about 90 minutes to 2 hours to prepare.

Shopping list (US Chef’s Store for bulk purchases)

1 case (2 gal) whole milk

1 case butter chips (optional)

1 1lb butter cube (used for griddle cooking)

1 case eggs

2 cases Hash Brown patty’s

2 cases Smithfield sausage links

2 Krusteez Pancake mix

1 lg syrup

2 5lb boxes oranges or 2 lg bags

3 juices (your choice)

1 bag shredded cheese (your choice)

**You could substitute coffee cake for pancakes if you have limited griddle space, bacon for sausage, and any fruit.**

Directions

Heat hash browns and sausage in convection oven. They are pre-cooked so really just heating/crisping up.

Crack eggs in large bowl (use a hand mixer to blend or put eggs in blend). Add salt, pepper, milk/water to taste. Use flat top grill to scramble eggs. Cheese can be sprinkled on eggs per request in the serving line.

Make pancake mix according to box directions. Use flat top grill to make pancakes (1-2 pancakes per resident).
