Build your own tacos are a fun and easy meal to prepare. Make sure you have lots of helpers to serve up all the toppings. Here’s a recipe for 60 people:

Ingredients:

Ground Beef – 20 lbs

Taco Seasoning – 3-5 cups depending on taste

Fajita Veggies – 2-3 Bell Peppers, 4 Onions, mushrooms

Small Flour/Corn Tortillas – 120

Toppings:

Shredded Cheese – 5 lb bag

Iceberg Lettuce – 4 heads

Roma Tomatoes – 10

Sour Cream – 4 pints

Cilantro – 3 bunches

Salsa – 64 oz bottle (1 or 2)

Nacho Cheese – 6 10 ounce cans

Spanish Rice and Beans:

Minute Rice – about 8 lbs uncooked rice

Canned Tomatoes – 4 cans

Canned beans – 4 cans Pinto or Black Beans

Directions:

Brown ground beef and add taco seasoning. Sauté vegetables on stove top with oil, salt, and pepper. Warm up tortillas in oven if you like. Chop lettuce and prepare toppings in bowls. Heat nacho cheese sauce.

Cook rice according to package. Some shelters may have rice cookers. Heat beans and mix in rice with canned tomatoes (drained).
